Son nom vient de l&rsquo;arabe iskebech, signifiant \u00ab\u00a0rago\u00fbt au vinaigre\u00a0\u00bb, et a \u00e9t\u00e9 introduit dans la p\u00e9ninsule Ib\u00e9rique durant la domination arabe, \u00e0 l&rsquo;origine comme m\u00e9thode de conservation des aliments, notamment du poisson. La premi\u00e8re apparition \u00e9crite du terme en castillan date de 1525, dans le Libro de los Guisados de <em>Ruperto de Nola,<\/em> bien que sa mention la plus ancienne soit attribu\u00e9e au Llibre de Sent Sov\u00ed catalan, datant de 1324. <\/p>\n\n<p class=\"wp-block-paragraph\">Des si\u00e8cles plus tard, <strong>l&rsquo;escab\u00e8che<\/strong> reste un pilier de la cuisine espagnole. Aujourd&rsquo;hui, il est g\u00e9n\u00e9ralement servi en <em>ap\u00e9ritif ou en tapa dans les bars et restaurants,<\/em> pr\u00e9sent dans toutes les r\u00e9gions du pays avec ses propres variations : des moules marin\u00e9es galiciennes au lapin \u00e0 la manchega, en passant par la perdrix castillane ou les sardines andalouses.  <\/p>\n\n<p class=\"wp-block-paragraph\">Cette recette de <strong>Mayonnaise d\u2019Escab\u00e8che de Moules,<\/strong> \u00e9labor\u00e9e par notre collaborateur <em>Javier S\u00e1nchez<\/em>, en est l\u2019une de ces expressions. Une proposition qui reprend l\u2019\u00e2me de l\u2019escab\u00e8che classique \u2014 le vinaigre, les \u00e9pices, la saveur marine \u2014 et la transforme en une sauce onctueuse, intense et totalement innovante gr\u00e2ce \u00e0 l\u2019utilisation de <a href=\"https:\/\/www.sosa.cat\/fr\/produit\/promayo\/\">Promayo,<\/a> notre ingr\u00e9dient technique qui <strong>red\u00e9finit l\u2019\u00e9mulsion en cuisine moderne.<\/strong> <\/p>\n\n<h2 class=\"wp-block-heading\">Comment et o\u00f9 servir cette mayonnaise<\/h2>\n\n<p class=\"wp-block-paragraph\">La polyvalence de cette <strong>Mayonnaise d&rsquo;Escab\u00e8che de Moules<\/strong> en fait une ressource exceptionnelle aussi bien en cuisine de restaurant qu&rsquo;en cuisine de produit.
