L&rsquo;objectif est clair : obtenir une p\u00e2te \u00e0 frire ultra-l\u00e9g\u00e8re, croustillante et translucide, qui enveloppe l&rsquo;ingr\u00e9dient sans le dominer. Toutefois, pour obtenir cette <strong><em>texture a\u00e9r\u00e9e et ce croustillant persistant<\/em><\/strong>, il faut une bonne ma\u00eetrise technique et, bien souvent, des ingr\u00e9dients fonctionnels capables de transformer une p\u00e2te classique en quelque chose d&rsquo;exceptionnel.  <\/p>\n\n<p>Cette recette de tempura au matcha, cr\u00e9\u00e9e par <em>Martin Lippo<\/em>, va encore plus loin : il introduit le matcha directement dans la p\u00e2te \u00e0 frire, cr\u00e9ant ainsi un contraste de saveurs unique lorsqu&rsquo;il est appliqu\u00e9 aux crevettes fra\u00eeches. Il ne s&rsquo;agit pas seulement d&rsquo;une question de couleur verte, mais d&rsquo;une d\u00e9cision aromatique qui fusionne le profil v\u00e9g\u00e9tal et umami du th\u00e9 matcha avec la douceur marine des crevettes. Le Japon rencontre le Japon dans chaque bouch\u00e9e.  <\/p>\n\n<h2 class=\"wp-block-heading\">Procrunx : la cl\u00e9 d&rsquo;une nettet\u00e9 durable<\/h2>\n\n<p>Le secret technique de cette tempura r\u00e9side dans le <a href=\"https:\/\/www.sosa.cat\/fr\/produit\/procrunx\/\" type=\"link\" id=\"https:\/\/www.sosa.cat\/producto\/procrunx\/\" target=\"_blank\" rel=\"noreferrer noopener\">Procrunx<\/a>, notre fibre de bl\u00e9 fonctionnelle sp\u00e9cialement con\u00e7ue pour apporter une texture croustillante aux p\u00e2tes \u00e0 frire et aux aliments frits. Contrairement aux farines traditionnelles, qui peuvent cr\u00e9er des p\u00e2tes lourdes ou des cro\u00fbtes qui perdent rapidement leur croustillant, <a href=\"https:\/\/www.sosa.cat\/fr\/produit\/procrunx\/\" type=\"link\" id=\"https:\/\/www.sosa.cat\/producto\/procrunx\/\" target=\"_blank\" rel=\"noreferrer noopener\">Procrunx<\/a> agit comme un agent structurel qui maintient l&rsquo;a\u00e9ration de la p\u00e2te \u00e0 frire et prolonge le croustillant m\u00eame apr\u00e8s quelques minutes de repos. <\/p>\n\n<h3 class=\"wp-block-heading\">Siphon : une extr\u00eame l\u00e9g\u00e8ret\u00e9 dans chaque batteur<\/h3>\n\n<p>Martin Lippo utilise un <em>siphon \u00e0 mousse<\/em> pour pr\u00e9parer cette p\u00e2te \u00e0 tempura, et la raison en est purement technique. En chargeant le m\u00e9lange dans le siphon avec des charges de gaz et en le remuant, nous incorporons des microbulles d&rsquo;air de mani\u00e8re homog\u00e8ne et contr\u00f4l\u00e9e. Le r\u00e9sultat est une p\u00e2te ultra-l\u00e9g\u00e8re, presque mousseuse, qui se dilate au contact de l&rsquo;huile chaude et g\u00e9n\u00e8re la <em>p\u00e2te translucide et a\u00e9r\u00e9e<\/em> caract\u00e9ristique <em>de la tempura traditionnelle.<\/em>  <\/p>\n\n<p>Le repos de deux heures au r\u00e9frig\u00e9rateur n&rsquo;est pas facultatif : il permet \u00e0 la farine de s&rsquo;hydrater compl\u00e8tement, \u00e0 la levure fra\u00eeche de d\u00e9velopper son activit\u00e9 de mani\u00e8re contr\u00f4l\u00e9e et aux bulles d&rsquo;air de se stabiliser dans la structure de la p\u00e2te. Sauter cette \u00e9tape compromet la texture finale. <\/p>\n\n<h3 class=\"wp-block-heading\">Technique \u00e9tape par \u00e9tape<\/h3>\n\n<p>La pr\u00e9paration est simple mais demande de la pr\u00e9cision : <em>m\u00e9langer dans un verre am\u00e9ricain la farine, le <a href=\"https:\/\/www.sosa.cat\/fr\/produit\/the-vert-matcha-c-bio-en-poudre\/\" type=\"link\" id=\"https:\/\/www.sosa.cat\/producto\/te-verde-matcha-c-bio-en-polvo\/\" target=\"_blank\" rel=\"noreferrer noopener\">PROCRUNX, le<\/a> th\u00e9 matcha, l&rsquo;eau min\u00e9rale froide, la levure fra\u00eeche, le sel et le sucre.<\/em> Fouetter \u00e0 pleine puissance jusqu&rsquo;\u00e0 l&rsquo;obtention d&rsquo;un m\u00e9lange homog\u00e8ne. Filtrer pour \u00e9liminer les \u00e9ventuels grumeaux. Remplir un siphon d&rsquo;un litre, ajouter trois charges de gaz, agiter vigoureusement et mettre au r\u00e9frig\u00e9rateur pendant deux heures.  <\/p>\n\n<p>Lors de la friture, les crevettes sont plong\u00e9es directement dans la p\u00e2te qui sort du siphon &#8211; mousseuse, l\u00e9g\u00e8re, presque \u00e9th\u00e9r\u00e9e &#8211; et plac\u00e9es dans l&rsquo;huile chaude \u00e0 180 \u00b0C. Le contraste thermique g\u00e9n\u00e8re une expansion imm\u00e9diate des bulles d&rsquo;air, ce qui cr\u00e9e cette texture croustillante et translucide caract\u00e9ristique.
