Au lieu de p\u00e2tes conventionnelles, il utilise des cr\u00eapes aux \u00e9pinards. Et au lieu d&rsquo;une sauce b\u00e9chamel classique \u00e0 base de roux, il incorpore <em>GELCREM CHAUD<\/em> comme texturant fonctionnel. Le r\u00e9sultat est un plat visuellement \u00e9tonnant, techniquement impeccable et sensoriellement surprenant.   <\/p>\n\n<h2 class=\"wp-block-heading\">B\u00e9chamel aux champignons avec GELCREM CHAUD : substitution intelligente de la f\u00e9cule de ma\u00efs<\/h2>\n\n<p>Dans une lasagne traditionnelle cuite au four, la sauce b\u00e9chamel peut \u00eatre pr\u00e9par\u00e9e avec du roux sans grandes complications. Cependant, lorsqu&rsquo;elle doit \u00eatre congel\u00e9e puis frite, les exigences techniques changent radicalement.
