Au coucher du soleil, l&rsquo;iftar n&rsquo;est pas seulement un repas : c&rsquo;est une \u00e9treinte partag\u00e9e, un doux murmure apr\u00e8s l&rsquo;attente. Et c&rsquo;est pr\u00e9cis\u00e9ment dans cet instant dor\u00e9 que na\u00eet notre proposition la plus \u00e9vocatrice : <strong>Kataif Canollo<\/strong>, une cr\u00e9ation de notre chef <em>Jos\u00e9 Carlos.<\/em>  <\/p>\n\n<h2 class=\"wp-block-heading\">L&rsquo;\u00e2me du Kataif<\/h2>\n\n<p>Le Qatayef est l&rsquo;un des grands protagonistes du Ramadan. Traditionnellement garni de fruits secs ou de fromage et baign\u00e9 de sirop, cette douceur d&rsquo;origine levantine symbolise le rassemblement, la g\u00e9n\u00e9rosit\u00e9 et la c\u00e9l\u00e9bration. Sa texture d\u00e9licate et sa forme de demi-lune ont accompagn\u00e9 des g\u00e9n\u00e9rations de tables familiales.  <\/p>\n\n<p>Aujourd&rsquo;hui, nous le r\u00e9interpr\u00e9tons sans perdre son esprit.<\/p>\n\n<h2 class=\"wp-block-heading\">Kataif Canollo : la tradition qui se r\u00e9invente<\/h2>\n\n<p>Notre Kataif Canollo reprend l&rsquo;essence du kataif classique et l&rsquo;enveloppe dans un format contemporain, presque sculptural, o\u00f9 chaque \u00e9l\u00e9ment dialogue avec le suivant :<\/p>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li><strong>Voile de sirop de dattes :<\/strong> un manteau brillant et soyeux \u00e9labor\u00e9 avec notre produit Elastic, qui apporte souplesse et structure. Le r\u00e9sultat est un sirop qui non seulement adoucit, mais enveloppe comme un tissu translucide aux notes profondes et caram\u00e9lis\u00e9es. <\/li>\n\n\n\n<li><strong>Garniture cr\u00e9meuse de fromage Baladi et mascarpone :<\/strong> le c\u0153ur du Kataif Canollo bat en son int\u00e9rieur. Une garniture soyeuse o\u00f9 le caract\u00e8re l\u00e9g\u00e8rement salin du fromage Baladi se fond avec la texture velout\u00e9e du Mascarpone Elle&amp;Vire. Gr\u00e2ce \u00e0 l&rsquo;incorporation de Konjac, nous obtenons une texture ferme mais d\u00e9licate, qui conserve sa forme \u00e0 la coupe et, en m\u00eame temps, fond doucement en bouche.  <\/li>\n\n\n\n<li><strong>Gel frais de citron :<\/strong> \u00e9paissi avec Gelcrem Froid, il apporte un contrepoint vibrant, lumineux, presque p\u00e9tillant. C&rsquo;est l&rsquo;\u00e9clat citronn\u00e9 qui \u00e9veille l&rsquo;ensemble et harmonise la douceur de la datte et l&rsquo;onctuosit\u00e9 du fromage. <\/li>\n\n\n\n<li><strong>Perles d&rsquo;olive verte :<\/strong> petites sph\u00e8res \u00e9labor\u00e9es avec de l&rsquo;Agar Agar, qui surprennent par une touche saline inattendue.
