Dans cette recette, nous pr\u00e9sentons notre <strong>\u00c9cume Froide de P\u00eache Jaune, <\/strong>r\u00e9alis\u00e9e avec <strong>Proespuma Froid,<\/strong> un texturant sp\u00e9cialement con\u00e7u pour obtenir des \u00e9cumes stables et homog\u00e8nes sans avoir besoin d\u2019appliquer de chaleur. <\/p>\n\n<p>La p\u00eache jaune, avec son profil aromatique doux et l\u00e9g\u00e8rement floral, est un fruit id\u00e9al pour ce type de pr\u00e9paration. Sa chair velout\u00e9e et juteuse se transforme en une \u00e9cume lisse et brillante qui tient parfaitement dans l\u2019assiette, offrant une exp\u00e9rience l\u00e9g\u00e8re mais riche en saveurs. <\/p>\n\n<h2 class=\"wp-block-heading\">La technique : simple et efficace<\/h2>\n\n<p>Pour cette r\u00e9alisation, il suffit de m\u00e9langer la pur\u00e9e de p\u00eache avec <a href=\"https:\/\/www.sosa.cat\/fr\/produit\/proespuma-froid\/\" target=\"_blank\" rel=\"noreferrer noopener\">Proespuma Froid,<\/a> de mixer jusqu\u2019\u00e0 obtenir une texture homog\u00e8ne, puis de charger le siphon avec deux cartouches de gaz.
