Dans ce <strong>Cake Yuzu et Matcha, <\/strong>nous explorons ce contraste \u00e0 travers une approche technique pr\u00e9cise et contemporaine, o\u00f9 saveur et structure travaillent en parfaite harmonie.  <\/p>\n\n<h2 class=\"wp-block-heading\">Un financier au matcha avec caract\u00e8re<\/h2>\n\n<p>La base de cette cr\u00e9ation est un <strong>financier au matcha,<\/strong> enrichi en poudre d\u2019amande afin d\u2019apporter moelleux, structure et une mie fine et stable apr\u00e8s cuisson. Le <strong>matcha<\/strong> offre non seulement une couleur intense et une signature v\u00e9g\u00e9tale, mais aussi une belle persistance aromatique. Son profil l\u00e9g\u00e8rement tannique \u00e9quilibre la douceur et pr\u00e9pare le palais \u00e0 l\u2019intensit\u00e9 acidul\u00e9e du yuzu.  <\/p>\n\n<p>La poudre d\u2019amande joue un r\u00f4le cl\u00e9. Sa richesse naturelle en mati\u00e8res grasses permet d\u2019obtenir une texture moelleuse et \u00e9l\u00e9gante, capable d\u2019accueillir un insert sans perdre en l\u00e9g\u00e8ret\u00e9. <\/p>\n\n<h2 class=\"wp-block-heading\">Insert au yuzu : une acidit\u00e9 structur\u00e9e<\/h2>\n\n<p>Au c\u0153ur du cake, nous int\u00e9grons un insert r\u00e9alis\u00e9 avec notre <a href=\"https:\/\/www.sosa.cat\/fr\/produit\/pate-de-yuzu-concentree\/\" type=\"link\" id=\"https:\/\/www.sosa.cat\/producto\/pasta-concentrada-de-yuzu\/\" target=\"_blank\" rel=\"noreferrer noopener\">P\u00e2te Concentr\u00e9e de Yuzu,<\/a> garantissant intensit\u00e9, r\u00e9gularit\u00e9 et puret\u00e9 aromatique. Pour le structurer, nous utilisons de la <a href=\"https:\/\/www.sosa.cat\/fr\/produit\/gomme-gellane\/\" type=\"link\" id=\"https:\/\/www.sosa.cat\/producto\/goma-gellan\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gomme Gellan,<\/a> un g\u00e9lifiant d\u2019origine v\u00e9g\u00e9tale issu de la fermentation bact\u00e9rienne. <\/p>\n\n<p>La Gellan permet d\u2019obtenir un gel ferme, stable et parfaitement compatible avec la cuisson. Contrairement \u00e0 d\u2019autres g\u00e9lifiants, elle r\u00e9siste aux hautes temp\u00e9ratures sans perdre sa structure, ce qui en fait un outil id\u00e9al pour des inserts qui doivent conserver une d\u00e9coupe nette apr\u00e8s passage au four.
