Cette technique consiste \u00e0 faire mariner les aliments dans un m\u00e9lange de vinaigre, d&rsquo;huile, d&rsquo;herbes, d&rsquo;\u00e9pices et d&rsquo;autres ar\u00f4mes, ce qui permet non seulement de les conserver, mais aussi de leur donner un go\u00fbt particulier et souvent tr\u00e8s savoureux. <\/p>\n\n<p>Une fois que le m\u00e9lange de marinade de votre choix est pr\u00eat et que vous avez laiss\u00e9 mariner suffisamment longtemps, nous utiliserons l&rsquo;agent texturant <strong><mark style=\"background-color: rgba(0, 0, 0, 0); color: #00cfab;\" class=\"has-inline-color\"><a href=\"https:\/\/www.sosa.cat\/fr\/produit\/proespuma-caliente\/\" target=\"_blank\" rel=\"noreferrer noopener\">Proespuma Chaud<\/a> pour cr\u00e9er une \u00e9cume l\u00e9g\u00e8re et a\u00e9r\u00e9e.<\/mark><\/strong> Ce texturant est id\u00e9al pour les \u00e9cumes chaudes et se dissout facilement dans la pr\u00e9paration liquide ou semi-liquide que nous avons cr\u00e9\u00e9e avec la marinade.<strong> Ses propri\u00e9t\u00e9s stabilisantes aideront \u00e0 maintenir la consistance de l&rsquo;\u00e9cume pendant qu&rsquo;elle est mont\u00e9e et servie.<\/strong><\/p>\n\n<p>Apr\u00e8s avoir dissous l&rsquo;agent texturant <strong><strong><mark class=\"has-inline-color\" style=\"background-color: rgba(0, 0, 0, 0); color: #00cfab;\">Proespuma Chaud<\/mark> <\/strong><\/strong>edans la pr\u00e9paration de la marinade, l&rsquo;\u00e9tape suivante consiste \u00e0 verser le m\u00e9lange dans un siphon \u00e0 deux charges.
