Peschardt pour Unilever, a \u00e9t\u00e9 perfectionn\u00e9e et popularis\u00e9e par le c\u00e9l\u00e8bre chef&nbsp;<strong>Ferran Adri\u00e0<\/strong>&nbsp;au restaurant<strong><em>&nbsp;El Bulli dans les ann\u00e9es 2000.<\/em><\/strong>&nbsp;Bas\u00e9e sur les principes de la chimie alimentaire, cette technique innovante a permis aux chefs avant-gardistes d\u2019exp\u00e9rimenter de nouvelles textures et pr\u00e9sentations, transformant ainsi la gastronomie contemporaine. Depuis, les chefs du monde entier l\u2019ont adopt\u00e9e et adapt\u00e9e, la consolidant comme un outil essentiel de la cuisine moderne.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les ingr\u00e9dients cl\u00e9s<\/h2>\n\n\n\n<p>Pour r\u00e9aliser la sph\u00e9rification,<strong>&nbsp;trois ingr\u00e9dients<\/strong>&nbsp;cl\u00e9s sont n\u00e9cessaires :<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong><a href=\"https:\/\/www.sosa.cat\/fr\/produit\/alginate\/\" target=\"_blank\" rel=\"noreferrer noopener\">Alginate :<\/a><\/strong><\/p>\n\n\n\n<p>D\u00e9riv\u00e9 des algues, c&rsquo;est l&rsquo;agent qui r\u00e9agit avec le calcium pour former un film g\u00e9lifi\u00e9 autour du liquide. Principalement utilis\u00e9 en sph\u00e9rification directe, ce type de calcium permet la r\u00e9action avec l\u2019alginate pour former la couche de gel. M\u00e9lange de deux sels qui permet d\u2019incorporer du calcium dans un milieu sans ajouter d\u2019ar\u00f4me. Utilis\u00e9 en sph\u00e9rification inverse, il est pr\u00e9f\u00e9r\u00e9 pour sa saveur neutre, permettant d\u2019encapsuler des liquides sans alt\u00e9rer leur saveur d\u2019origine..<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"600\" height=\"350\" src=\"https:\/\/www.sosa.cat\/wp-content\/uploads\/2024\/09\/gluconolactato-esferificacion-sosa-1.png\" alt=\"\" class=\"wp-image-33390\" srcset=\"https:\/\/www.sosa.cat\/wp-content\/uploads\/2024\/09\/gluconolactato-esferificacion-sosa-1.png 600w, https:\/\/www.sosa.cat\/wp-content\/uploads\/2024\/09\/gluconolactato-esferificacion-sosa-1-300x175.png 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Types de sph\u00e9rification<\/h2>\n\n\n\n<p>Il existe deux principaux types de sph\u00e9rification : <strong><mark style=\"background-color:rgba(0, 0, 0, 0);color:#00cfab\" class=\"has-inline-color\">la sph\u00e9rification directe et la sph\u00e9rification inverse.<\/mark><\/strong> Les diff\u00e9rences et les processus de chaque type sont expliqu\u00e9s ci-dessous.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Sph\u00e9rification directe<\/h3>\n\n\n\n<p>Dans la sph\u00e9rification directe, l&rsquo;alginate est m\u00e9lang\u00e9 directement au liquide \u00e0 sph\u00e9rifier. Cette m\u00e9thode est id\u00e9ale pour les liquides non laitiers <strong><mark style=\"background-color:rgba(0, 0, 0, 0);color:#00cfab\" class=\"has-inline-color\">les liquides non laitiers sans calcium.<\/mark><\/strong> Trois bains sont utilis\u00e9s ici :   <\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>BBain d\u2019alginate :&nbsp;<\/strong>M\u00e9langer le liquide \u00e0 sph\u00e9rifier avec de l\u2019alginate. Appliquer le m\u00e9langeur et le laisser reposer jusqu\u2019\u00e0 ce qu\u2019il perde tout son air. Si le pH du liquide est inf\u00e9rieur \u00e0 4, ajouter du&nbsp;<strong>citrate de sodium<\/strong>&nbsp;pour ajuster l\u2019acidit\u00e9. L\u2019utilisation excessive entra\u00eenera un mauvais go\u00fbt du produit.<\/li>\n\n\n\n<li><strong>Bain de chlorure de calcium :<\/strong>&nbsp;Le liquide d\u2019alginate est immerg\u00e9 dans un bain de chlorure de calcium (5-8 g par litre en fonction de la taille de la sph\u00e8re), o\u00f9 la r\u00e9action forme une couche qui se g\u00e9lifie vers l\u2019int\u00e9rieur. Plus le temps pass\u00e9 dans le bain est long, plus l\u2019alginate se g\u00e9lifie.<\/li>\n\n\n\n<li><strong>Bain d\u2019eau :<\/strong>&nbsp;Enfin, les sph\u00e8res sont rinc\u00e9es \u00e0 l\u2019eau pour \u00e9liminer le go\u00fbt amer du chlorure de calcium.<\/li>\n<\/ol>\n\n\n\n<p>Voici un exemple de recette o\u00f9 l&rsquo;on utilise la sph\u00e9rification directe avec un liquide dont le pH est inf\u00e9rieur \u00e0 4 : le <strong>caviar de fraise <\/strong>. 0);color:#00cfab\" class=\"has-inline-color\"> les liquides contenant du calcium,<\/mark><\/strong> comme les produits laitiers. Dans cette m\u00e9thode, les r\u00f4les des bains d&rsquo;alginate et de calcium sont invers\u00e9s :   <\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Bain de calcium : <\/strong>le liquide \u00e0 sph\u00e9rifier est m\u00e9lang\u00e9 avec du gluconolactate de calcium. Si le liquide est tr\u00e8s liquide, on ajoute ce qui suit <strong><em> <\/em><\/strong><a href=\"https:\/\/www.sosa.cat\/fr\/produit\/gelespessa\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong><em>Gelespessa<\/em><\/strong> <\/a>(6g par kilo) ou <strong><em><a href=\"https:\/\/www.sosa.cat\/fr\/produit\/gomme-xanthane\/\" target=\"_blank\" rel=\"noreferrer noopener\">Xanthane<\/a><\/em><\/strong> (2g par kilo) pour lui donner la densit\u00e9 n\u00e9cessaire.  <\/li>\n\n\n\n<li><strong>Bain d&rsquo;alginate : <\/strong>les sph\u00e8res sont immerg\u00e9es dans un bain d&rsquo;alginate (5 g par litre d&rsquo;eau sans calcium), ce qui forme une couche g\u00e9lifi\u00e9e \u00e0 l&rsquo;ext\u00e9rieur tandis que l&rsquo;int\u00e9rieur reste liquide.  <\/li>\n\n\n\n<li><strong>Bain d&rsquo;eau : <\/strong>les sph\u00e8res sont rinc\u00e9es \u00e0 l&rsquo;eau pour \u00e9liminer tout r\u00e9sidu d&rsquo;alginate.  <\/li>\n<\/ol>\n\n\n\n<p>Gr\u00e2ce \u00e0 l&rsquo;inversion des bains, on obtient une sph\u00e8re qui reste toujours liquide \u00e0 l&rsquo;int\u00e9rieur, car la couche qui se forme se g\u00e9lifie vers l&rsquo;ext\u00e9rieur.  <\/p>\n\n\n<article class=\"receta-blog\" data-receta-id=\"12553\">\n\n      <!-- Header solo visible en impresi\u00f3n -->\n      <div class=\"receta-print-header\">\n        <img decoding=\"async\" src=\"https:\/\/www.sosa.cat\/wp-content\/plugins\/recetas-block\/assets\/sosa-logo.png\" alt=\"Sosa\" class=\"receta-print-logo\" \/>\n      <\/div>\n\n      <div class=\"receta-titulo-imagen\">\n        <div>\n          <h2>Sph\u00e9rification des cerises<\/h2>\n          <div class=\"receta-excerpt\">\n            <p>Dans cette recette, nous avons utilis\u00e9 de la pur\u00e9e de cerises naturelles comme liquide de sph\u00e9rification, ce qui donne un go\u00fbt frais et naturel. La combinaison d&rsquo;ingr\u00e9dients tels que l&rsquo;alginate, la gomme xanthane et le gluconolactate permet d&rsquo;obtenir la consistance et la texture parfaites pour la sph\u00e9rification.
