This time, chef <strong>Iv\u00e1n V\u00e1zquez<\/strong> -who remains a key contributor to our ice cream and sorbet category this year- presents a recipe that blends tradition, technical precision, and perfectly balanced originality: <strong>Chocolate and liquorice ice-cream<\/strong>. <\/p>\n\n<p>This creation stands out not only for its deep, elegant flavor but also for the technical accuracy behind its formulation. For the ice cream base, Ivan has uses <strong>Valrhona&#8217; s Ivory white chocolate ,<\/strong> renowned for its creamy profile, soft milky notes, and ideal structure for frozen desserts. To enrich this base, he incorporates our <strong><a href=\"https:\/\/www.sosa.cat\/en\/product\/pasta-natural-de-regaliz\/\" target=\"_blank\" rel=\"noreferrer noopener\">Natural Liquorice Paste,<\/a><\/strong> part of our line of Natural <strong><a href=\"https:\/\/www.sosa.cat\/en\/product-category\/concentrated-pastes\/natural-concentrated-pastes\/\" target=\"_blank\" rel=\"noreferrer noopener\">Natural Concentrated Pastes.<\/a><\/strong> This ingredient delivers an intense, authentic flavour while also enhancing the visual appeal with a clear brown hue, making the ice cream attractive both in display and plated desserts.  <\/p>\n\n<p>Technically, the recipe relies on the use of <a href=\"https:\/\/www.sosa.cat\/en\/product\/profiber-stab-5\/\" target=\"_blank\" rel=\"noreferrer noopener\">Profiber Stab 5,<\/a> our stabilizer specifically designed for ice creams and sorbets, which guarantees a creamy texture and excellent stability during service.
