This is the third creation in a series of six that we are developing in collaboration throughout the year, designed especially for the HORECA channel and restaurant professionals. <\/p>\n\n<p>In this proposal, aesthetics and technical precision come together thanks to the use of the mosaic technique. This method consists of <strong><em>arranging small solid elements (such as vegetables, meats or fruits) in an orderly<\/em><\/strong> (such as vegetables, meats or fruits) to form a visually harmonious, almost pictorial structure. It is a technique that requires precision in cutting, chromatic balance and a deep knowledge of the ingredients, both in taste and texture.  <\/p>\n\n<h2 class=\"wp-block-heading\">Cold agglutinates<\/h2>\n\n<p>To achieve a solid structure without sacrificing the freshness and definition of the ingredients, we have used <strong><a href=\"https:\/\/www.sosa.cat\/en\/product\/gelbinder\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gelbinder, <\/a><\/strong>a texturizer that acts as a cold binder. This ingredient <strong><em>allows the components of the mosaic to bind together without crumbling,<\/em><\/strong> maintaining its shape even during cooking or handling processes. <\/p>\n\n<p>The mosaic is accompanied by a <strong>citrus gel<\/strong> made with <strong><a href=\"https:\/\/www.sosa.cat\/en\/product\/gracila-gel\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gracila Gel,<\/a><\/strong> providing a fresh and bright note that balances the composition with acidity and a smooth texture, without losing definition on the plate.<\/p>\n\n<p><\/p>\n","protected":false},"featured_media":32517,"template":"","meta":{"_acf_changed":false,"inline_featured_image":false},"autor-receta":[],"receta-categorias":[280],"especialidad":[286],"tecnica-y-aplicacion":[745],"class_list":["post-32568","receta","type-receta","status-publish","has-post-thumbnail","hentry","receta-categorias-texturizing","especialidad-savoury","tecnica-y-aplicacion-cream"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.2 -
