This technique involves marinating foods in a mixture of vinegar, oil, herbs, spices and other flavorings, which not only helps to preserve them, but also gives them a distinctive and often quite delicious flavor. <\/p>\n\n<p>Once your preferred escabeche mixture is ready and you have had time to marinate, we will use the texturizer <strong><mark style=\"background-color: rgba(0, 0, 0, 0); color: #00cfab;\" class=\"has-inline-color\"><a href=\"https:\/\/www.sosa.cat\/en\/product\/proespuma-caliente\/\" target=\"_blank\" rel=\"noreferrer noopener\">Proespuma Caliente<\/a><\/mark><\/strong> to create a light and airy foam. This texturizer is ideal for hot foams and dissolves easily in the liquid or semi-liquid preparation that we have created with the escabeche.<strong>  Its stabilizing properties will help maintain the consistency of the foam while it is being assembled and served.<\/strong><\/p>\n\n<p>After dissolving the texturizer <strong><strong><mark class=\"has-inline-color\" style=\"background-color: rgba(0, 0, 0, 0); color: #00cfab;\">Proespuma Caliente<\/mark><\/strong><\/strong> in the escabeche preparation, the next step would be to load the mixture into a two-charge siphon.
