It was there that the <strong>French National Team Selection<\/strong> took place \u2014 the team that will represent France at the 2027 <strong>Pastry World Cup.<\/strong> For the second consecutive time, <em>Sosa Ingredients <\/em>had the honor of being a premium sponsor of this prestigious event, reaffirming its commitment to innovation and to supporting the art of modern pastry. <\/p>\n\n<h2 class=\"wp-block-heading\">A celebration of French pastry excellence<\/h2>\n\n<p><strong>The Pastry World Cup<\/strong> is much more than a competition \u2014 it\u2019s a human and professional adventure, a key event for pastry lovers around the world. It brings together France\u2019s most talented chefs, united by passion, precision, and teamwork, all determined to make French pastry shine on the international stage.<br\/>Throughout the day, candidates competed in three categories \u2014 chocolate, sugar, and ice \u2014 showcasing their technical mastery and creativity before an exceptional jury. <\/p>\n\n<p>The winners, who will represent France in 2027, are:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong><a href=\"https:\/\/www.instagram.com\/yoanpalamara\/\" target=\"_blank\" rel=\"noreferrer noopener\">Yoan Palamara<\/a><\/strong> (Chocolate) \u2013 Professor at the Beausset Campus (CMA Formation), passionate about transmitting his experience and values to new generations.<\/li>\n\n\n\n<li><strong><a href=\"https:\/\/www.instagram.com\/abel_nesson\/\" target=\"_blank\" rel=\"noreferrer noopener\">Abel Nesson<\/a> <\/strong>(Sugar) \u2013 Chef at Len\u00f4tre, awarded in the St\u00e9phane Glacier Trophy 2023 and Relais Desserts Charles Proust 2024 competitions.<\/li>\n\n\n\n<li><strong><a href=\"https:\/\/www.instagram.com\/axel_lebellanger_\/\" target=\"_blank\" rel=\"noreferrer noopener\">Axel Lebellanger<\/a><\/strong> (Ice Cream) \u2013 Freelance instructor and consultant, with a distinguished career at the \u00c9cole Nationale Sup\u00e9rieure de P\u00e2tisserie.<\/li>\n<\/ul>\n\n<p>Each contestant demonstrated exceptional skills through challenging tests, including artistic sculptures, plated desserts, and buffet presentations.<\/p>\n\n<h2 class=\"wp-block-heading\">The vision of a master: Maxime Fr\u00e9d\u00e9ric, Honorary President<\/h2>\n\n<p>The Honorary President of the French Selection, Maxime Fr\u00e9d\u00e9ric, pastry chef at Pl\u00e9nitude* restaurant at Cheval Blanc Paris, brought his unique perspective and artistic sensibility to this edition. Renowned for his bold chocolate creations and technical mastery, he shared: <\/p>\n\n<p>\u201cPresiding over this selection is a responsibility that I assume with humility and commitment. I am looking for chefs who know how to transmit emotions through their creations, with a responsible vision of the product.\u201d<\/p>\n\n<h3 class=\"wp-block-heading\">Innovation in service of creativity<\/h3>\n\n<p>Throughout the competition, the participants had access to the range of texturizers from Sosa Ingredients, a key tool to enhance precision and stability in each preparation.
