This technological process allows us to guarantee a first quality product, with the right amount of sugar, maintaining its organoleptic qualities and enhancing the flavor. <\/p>\n\n<h2 class=\"wp-block-heading\">The Cold Confit\u00ae Process Step by Step<\/h2>\n\n<ol class=\"wp-block-list\">\n<li><strong>Cut<\/strong> and frozen fruit.<\/li>\n\n\n\n<li><strong>Cooking<\/strong> in water at 90 \u00b0C.<\/li>\n\n\n\n<li>Removal from water.<\/li>\n\n\n\n<li><strong>Addition<\/strong> of syrup at 80 \u00b0C.<\/li>\n\n\n\n<li><strong>Vacuum application* <\/strong>for 15 minutes to the fruit inside the syrup. At this point in the process, the temperature is 75 \u00b0C. <\/li>\n\n\n\n<li><strong>Resting<\/strong> in an ambient atmosphere with the same syrup. At this point in the process, the temperature has decreased to 60 \u00baC. <\/li>\n\n\n\n<li><strong>Syrup extraction.<\/strong><\/li>\n\n\n\n<li>Manual <strong>packaging<\/strong> of the fruit. The fruit pieces are placed in an orderly manner to maintain the shape and optimal quality of the cut. <\/li>\n\n\n\n<li><strong>Sealing<\/strong> of the trays in an automated way, applying the vacuum and nitrogen gas technique to prevent oxidation of the fruit. All contact of the fruit with the air is eliminated. <\/li>\n<\/ol>\n\n<p>*<strong>The vacuum<\/strong> causes an osmosis process that allows the fruit to absorb just the right amount of sugar.
