Vanilla ice cream

Ingredients

    • 575g - Milk
    • 185g - 35% fat cream
    • 32g - Powdered milk 1% mg
    • 105g - Sugar
    • 60g - Powdered Glucose DE33
    • 38g - Dextrose
    • 5g - Profiber Stab 5
    • 3g - Bourbon vanilla 

Prepared by

    1. Mix the liquids and heat to 30 ºC.
    2. Infuse the vanilla. Add the previously mixed solids and pasteurize.
    3. When the temperature of the mixture has dropped (60 ºC), blend with a hand-blender.
    4. Chill for 12 hours and churn.
