Strawberry and Buddha’s Hand Cream Gel

In this preparation, the Chef Martin Lipoo has chosen to use Gelcrem Cold, a thickener that provides a creamy texture without any fuss.

  • 100 g Strawberry puree 100%
  • 10 g Lemon juice
  • 20 g Simple syrup
  • 4 g Buddha hand zest
  • 14 g Gelcrem Cold (Sosa)
  1. Put all the ingredients into a jug.

  2. Mix using a hand blender for 2 minutes.

  3. Cover with cling film.

  4. Let it rest for 2 hours in the refrigerator.

  5. Mix using the hand blender again.

  6. Put into a squeeze bottle.
