Procrunx – Wheat dextrin for crunchy tempuras

In this recipe, Chef Lippo has incorporated the innovative Procrunx from Sosa Ingredients, a wheat dextrin designed to achieve exceptionally crispy tempura. This special blend adds a unique texture and maintains its irresistible crunch even after frying. Choosing quality ingredients is essential to bring out the flavor of the squid, and the Procrunx perfectly fulfills this function.

The heart of this gastronomic creation is the delicate squid, carefully selected to guarantee freshness and authentic flavor.

Ingredients

    • 115g - Water
    • 85g - Agglutinous rice flour
    • 3g - Fine salt
    • 10g - Procrunx
    • 1g - Madras Curry
    • - Cleaned squid

Prepared by

    1. Place the water, glutinous rice flour, salt, Procrunx and curry in a jar. Mix using a Túrmix.
    2. Heat the Slimmer to 160ºC on both plates.
    3. Place a Teflon sheet on the bottom plate. Make a circle of the liquid mass on the Teflon.
    4. Place a squid in the center of the dough. Place another Teflon sheet on top. Close the Slimmer.
    5. Cook for 2 minutes. Open and serve immediately.
