Piquillo Mayonnaise

Today we present an innovative version of the classic mayonnaise: the “Piquillo Mayonnaise”. This recipe is not only delicious, but also completely vegan, thanks to the incorporation of two key ingredients: Natur Emul y Flaxfiber.

Natur Emul is a multifunctional ingredient that stands out in gastronomy for its moisturizing, stabilizing and emulsifying properties. Its ability to disperse in both fats and aqueous liquids makes it the perfect choice for reducing fat content, such as egg yolk, in a wide variety of sweet and savory preparations. Ingredients

    • 80g - Roasted piquillos
    • 60g - Water
    • 50g - Olive oil
    • 100g - Sunflower oil
    • 4g - Salt
    • 4g - Natur emul
    • 3g - Flaxfiber

Prepared by

    1. Mix the piquillo peppers with the water and mash well. Strain through a fine sieve to remove the fibers.
    2. Add the natur emul and flaxfiber to the smoothie and blend again.
    3. Finally, emulsify with the oils to obtain the mayonnaise.
