Fruit Compact

Ingredients

    • 100g - Melon
    • 100g - Water melon
    • 100g - Kiwi
    • 100g - Cantaluope melon
    • 10g - Mint
    • 200g - Syrop 30ºB
    • 10g - Gelbinder
    • 20g - Maltodextrin

Prepared by

    1. Cut the fruit into 2X2cm cubes and put them in a vacuum-packed bag.
    2. Add the syrup and whole mint and pack 100%. Let it rest for 1 hour in the fridge.
    3. Drain the fruit and cut into 0.5X0.5mm cubes.
    4. Mix gelbinder with the maltodextrin in a bowl. Gradually sprinkle on the fruit while stirring with a spoon.
    5. Press the result into rings 6 cm in diameter and 1.5 cm high.
    6. Set aside for one night in the fridge.
