Coconut Pastry Cream

Ingredients

    • 380g - Rice drink
    • 430g - Coconut purée
    • 105g - Sugar
    • 68g - Gelcrem Hot
    • 6g - Natur Emul
    • 35g - Deodorized coconut fat

Prepared by

    1. Mix together the rice drink and coconut purée.
    2. Separately, mix the Gelcrem Hot, sugar and Natur Emul. Whisk the two mixtures together and cook until they come to the boil, stirring all the while.
    3. Take it off the heat and add the coconut fat.
    4. Whisk until you have a smooth, homogenous cream.
