Raspberry Pastry Cream

Ingredients

    • 350g - Rice drink
    • 425g - Raspberry purée
    • 115g - Sugar
    • 75g - Gelcrem Hot
    • 7g - Natur Emul Sosa ingredients
    • 50g - Deodorized coconut fat

Prepared by

    1. Mix the plant-based drink and raspberry purée.
    2. Separately, mix together the Gelcrem Hot and sugar. Whisk the two mixtures together and cook until they come to the boil, stirring all the while.
    3. Take the mixture off the heat and add the coconut fat and Natur Emul.
    4. Mix until the cream is smooth and homogenous.
