Dentelles with Procrunx: the collaboration of Restaurant Disfrutar in the search for the ideal crunchy

In our continuous quest to offer innovative ingredients for modern gastronomy and pastry, we have had the honor of collaborating with Disfrutar Restaurant, a benchmark of avant-garde cuisine that has been awarded multiple prizes, including three Michelin stars and recognition as the Best Restaurant 2024 in the “50th Best Restaurants” awards.

This collaboration has allowed us to conduct tastings with our Procrunx product, a high-quality wheat dextrin that provides an exceptional and long-lasting crunchy texture in various preparations.

Today, we invite you to discover one of the first recipes resulting from this collaboration: Dentelles Neutras with Procrunx!

What are the Dentelles?

Dentelles are very thin crunchy slices that are traditionally prepared in the pastry world. They are usually used as a decorative element or to accompany desserts, providing a crunchy and elegant touch. In savory cooking, they can also be used as appetizers or accompaniments to more complex dishes. Their main characteristic is their ultra-fine and crunchy texture, which makes them the ideal complement to give a twist to any recipe.

In the recipe that the Disfrutar team has successfully tested, Procrunx plays a fundamental role. It is not just a simple batter, but an ingredient that elevates textures to another level. This recipe is not only easy to make, but it is also incredibly versatile, perfect for both sweet and savory worlds, and offers a wide variety of culinary applications.

Dentelles with Procrunx: the collaboration of Restaurant Disfrutar in the search for the ideal crunchy

Ingredients

  • Dentelles
    • 90g - Mineral water
    • 40G - Virgin olive oil
    • 10g - Wheat flour
    • 14g - Procrunx

Prepared by

  • Dentelles
    1. Place the water, flour and procrunx in a tall, narrow bowl. Grind with an electric mixer until a homogeneous mixture is obtained.
    2. Add the oil in a trickle and continue blending until all the oil is integrated.
    3. Allow to hydrate in the refrigerator for at least 30 minutes.
    4. Place the non-stick frying pan on the heat until it is very hot.
    5. Pour the dentelle base to cover the surface of the entire pan and cook at full power so that it begins to bubble vigorously and large holes form.
    6. When the hole begins to be stable, lower the heat to minimum power to evaporate all the water without burning the dentelle.
    7. Remove the dentelle from the pan when all the water has evaporated and it can be removed from the pan.
    8. Remove on absorbent paper to remove all excess fat.
    9. Place the dentelle in the dehydrator until ready to use so that they are very crispy.
