Ingredients

  • Cinema Ice Cream: Popcorn, Caramel and Chocolate Blondie.
    • 50g - Popcorn ice cream
    • 20g - Caramel interior
    • 15g - White chocolate foam
    • 2g - Popcorn
    • 2g - Fried Corn
  • Popcorn ice cream
  • Caramel interior
  • Blond chocolate foam

Prepared by

  • Popcorn ice cream

    1. Infuse the popcorn and fried corn flour in the milk and cream for 30 minutes at 45º. Blend and strain.
    2. Mix this base with the rest of the ingredients and leave to mature for 6 hours in the refrigerator.
    3. Turbine and store at -15º.
  • Caramel interior

    1. Heat the cream, milk, glucose (2), vanilla and salt to 90 ºC.
    2. Cook Trehalose and Glucose (1) at 185 ºC.
    3. Add the hot cream preparation to the trehalose and continue beating. Keep cooking until 105 ºC. Remove and cool to 70 ºC.
    4. Add the butter and place in the refrigerator.
    5. Once cold, take 300 g of caramel and mix with 37 g of milk. Put the mixture in a 14 cm ring and freeze.
  • Blond chocolate foam

    1. Boil the milk and pour over the topping.
    2. Add the Profoam to the mixture, grind until perfectly homogenized and cool.
    3. Fill the siphon, load with two batches and set aside in the refrigerator.
  • Mounting

    1. Form a foam ball in the center of the plate. Hollow it out slightly with the back of a spoon. Place a quenelle of ice cream in the hollow.
    2. Decorate with caramel and fried corn chips and popcorn.
