Chocolate Sponge Cake

Ingredients

Prepared by

    1. Mix the water with the Potatowhip and the xanthan gum and blend for one minute with a hand blender.
    2. Beat the mixture with the electric whisk until it has a firm meringue texture.
    3. Add both the sugar and trehalose and beat for another 3 minutes.
    4. Melt the chocolate at 40 °C and fold it gently into the meringue.
    5. Finally, add the sifted flour and baking powder and mix them in gently using a flexible spatula.
    6. Spread the mixture into a baking tray and bake at 190 °C for 8 minutes.
