Almond Sponge

Ingredients

    • 15g - Potatowhip Sosa ingredients
    • 330g - Water
    • 150g - Sugar
    • 100g - Strong flour
    • 300g - Almond flour
    • 50g - Trehalose

Prepared by

    1. Using a hand blender, mix the water and Potatowhip for 1 minute.
    2. Beat the mixture using a hand blender, add the sugar and Trehalose to the meringue and beat for a further 3 minutes.
    3. Lastly, use a plastic sieve to sift in the flour and almond flour.
    4. Spread the results into a tray and bake at 390°F (200°C) for 9 minutes.
