Des dels oliverars grecs fins a les alm\u00e0sseres andaluses, l&#8217;oliva ha definit durant mil\u00b7lennis la manera de cuinar, conservar i pensar la gastronomia a tot l&#8217;arc mediterrani. I si hi ha un ingredient que condensa tota aquesta riquesa organol\u00e8ptica en la seva m\u00e0xima expressi\u00f3, \u00e9s precisament la salmorra: aquest l\u00edquid de conserva carregat de sal, acidesa i aromes que moltes cuines rebutgen sense saber que estan llen\u00e7ant l&#8217;\u00e0nima del producte.   <\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Martin Lippo<\/strong> ho sap. I en aquesta recepta de <strong>Maionesa d&#8217;Olives sense Ou,<\/strong> ho demostra. <\/p>\n\n<h2 class=\"wp-block-heading\">Quatre receptes. Una innovaci\u00f3. Un mateix punt de partida  <\/h2>\n\n<p class=\"wp-block-paragraph\">Aquesta <strong>maionesa d&#8217;olives<\/strong> \u00e9s la primera de les quatre receptes que<em> Martin Lippo<\/em> ha desenvolupat sota el paraigua de Promayo, la nostra m\u00e9s recent innovaci\u00f3. Quatre elaboracions diferents, quatre perfils de sabor diferents, per\u00f2 un mateix principi t\u00e8cnic: <strong>aconseguir emulsions d&#8217;alta qualitat sense necessitat d&#8217;ou,<\/strong> amb sabors m\u00e9s precisos, m\u00e9s nets i m\u00e9s intensos que qualsevol maionesa convencional. <\/p>\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.sosa.cat\/ca\/producte\/promayo\/\" type=\"link\" id=\"https:\/\/www.sosa.cat\/producto\/promayo\/\" target=\"_blank\" rel=\"noreferrer noopener\">Promayo<\/a> \u00e9s una base emulsionant d&#8217;origen vegetal que actua com a substitut directe de l&#8217;ou en l&#8217;elaboraci\u00f3 de maioneses i salses emulsionades. En no tenir sabor propi, permet que cada ingredient amb el qual es treballa s&#8217;expressi amb total llibertat. En una maionesa d&#8217;ou convencional, el sabor del rovell sempre \u00e9s present, modulant i en certa mesura limitant el perfil de l&#8217;ingredient principal. Amb Promayo, aquesta limitaci\u00f3 desapareix.   <\/p>\n\n<h3 class=\"wp-block-heading\">Oliva i salmorra: el duo que ho canvia tot<\/h3>\n\n<p class=\"wp-block-paragraph\">En aquesta primera recepta,<em> Martin Lippo<\/em> treballa amb dos elements del mateix origen: <em>l&#8217;oliva i la seva salmorra<\/em>. Una decisi\u00f3 t\u00e8cnica i conceptual alhora. <\/p>\n\n<p class=\"wp-block-paragraph\">Les olives aporten untuositat, amargor suau, notes fruitades i aquest car\u00e0cter mediterrani inconfusible que fa que la boca s&#8217;activi abans fins i tot d&#8217;empassar. Per\u00f2 \u00e9s <strong><em>la salmorra<\/em><\/strong> l&#8217;ingredient que suma el sabor intens. Carregada de sal, acidesa l\u00e0ctica i els compostos arom\u00e0tics propis de l&#8217;oliva fermentada, la salmorra actua com un potenciador de sabor natural: aporta profunditat, complexitat i un punt d&#8217;acidesa que equilibra el greix de l&#8217;emulsi\u00f3 de manera org\u00e0nica, sense necessitat d&#8217;afegir vinagre o suc de llimona per separat.  <\/p>\n\n<p class=\"wp-block-paragraph\">El resultat \u00e9s una maionesa que sap a oliva de manera total: no a oliva macerada en oli ni a pasta d&#8217;olives, sin\u00f3 a <strong><em>oliva viva<\/em>, <\/strong>amb tota la seva dimensi\u00f3 arom\u00e0tica intacta.<\/p>\n\n<h3 class=\"wp-block-heading\">Maionesa d&#8217;olives en cuina salada: un recurs vers\u00e0til i sofisticat<\/h3>\n\n<p class=\"wp-block-paragraph\">Una maionesa d&#8217;aquestes caracter\u00edstiques no \u00e9s un condiment secundari: \u00e9s una salsa amb car\u00e0cter propi, capa\u00e7 de transformar un plat senzill en una proposta gastron\u00f2mica amb profunditat i personalitat. En l&#8217;\u00e0mbit de la cuina salada -savoury- les seves aplicacions s\u00f3n \u00e0mplies i cadascuna d&#8217;elles revela una dimensi\u00f3 diferent del producte. <\/p>\n\n<p class=\"wp-block-paragraph\"><strong><em>Com a salsa d&#8217;acompanyament per a carns a la brasa:<\/em> <\/strong>l&#8217;amargor suau de l&#8217;oliva dialoga de manera natural amb les notes fumades de les carns a la graella. Un xai, una presa ib\u00e8rica o unes costelles troben en aquesta maionesa un contrast que potencia el seu sabor sense emmascarar-lo. <\/p>\n\n<p class=\"wp-block-paragraph\"><em><strong>En plats de peix i marisc:<\/strong><\/em> l&#8217;afinitat entre el perfil mediterrani de l&#8217;oliva i el mar \u00e9s hist\u00f2rica. Aquesta maionesa funciona de manera excepcional amb llobarro, orada, pop a la brasa, gambes a l&#8217;allioli o qualsevol preparaci\u00f3 on l&#8217;oli d&#8217;oliva ja \u00e9s protagonista.
