En lloc de pasta convencional, utilitza creps d&#8217;espinacs. I en lloc d&#8217;una beixamel cl\u00e0ssica elaborada amb roux, incorpora <em>Gelcrem Caliente<\/em> com a texturitzant funcional. El resultat \u00e9s un plat visualment impactant, t\u00e8cnicament impecable i sensorialment sorprenent.   <\/p>\n\n<h2 class=\"wp-block-heading\">Beixamel de bolets amb Gelcrem Calent: substituci\u00f3 intel\u00b7ligent de maizena<\/h2>\n\n<p>En una lasanya tradicional fornejada, la beixamel pot elaborar-se amb roux sense m\u00e9s complicacions. No obstant aix\u00f2, quan l&#8217;elaboraci\u00f3 se sotmetr\u00e0 a congelaci\u00f3 i posteriorment a fregit, les exig\u00e8ncies t\u00e8cniques canvien radicalment. Aqu\u00ed \u00e9s on l&#8217;elecci\u00f3 del texturitzant esdev\u00e9 determinant.  <\/p>\n\n<p>El xef utilitza <a href=\"https:\/\/www.sosa.cat\/ca\/producte\/gelcrem-calent\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gelcrem Caliente<\/a> com a substitut directe de la maizena, un canvi t\u00e8cnic que transforma el comportament de la beixamel en condicions extremes:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Resist\u00e8ncia a la congelaci\u00f3:<\/strong> molts texturitzants, inclosa la maizena convencional, pateixen sin\u00e8resi (separaci\u00f3 d&#8217;aigua) despr\u00e9s de cicles de congelaci\u00f3-descongelaci\u00f3. <a href=\"https:\/\/www.sosa.cat\/ca\/producte\/gelcrem-calent\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gelcrem Caliente<\/a> mant\u00e9 l&#8217;estructura de la beixamel intacta, evitant que l&#8217;aigua se separi i generi vidres de gel que trenquin la textura cremosa.<\/li>\n\n\n\n<li><strong>Estabilitat durant el fregit:<\/strong> quan la lasanya congelada se submergeix en oli calent, la transici\u00f3 t\u00e8rmica \u00e9s brusca. Una beixamel mal estabilitzada es pot liquar, explotar o perdre cremositat. Gelcrem Caliente garanteix que la beixamel mantingui el seu cos i textura sedosa fins i tot sota el xoc t\u00e8rmic del fregit.  <\/li>\n\n\n\n<li><strong>Textura cremosa sense mid\u00f3 residual:<\/strong> la maizena, encara que funcional, pot deixar una sensaci\u00f3 lleugerament granulosa o pastosa si no es cuina adequadament. El verd vibrant de les creps d&#8217;espinacs contrasta amb el blanc de la beixamel i el daurat cruixent del fregit.
