Aquesta paraula, que prov\u00e9 del franc\u00e8s trompe-l&#8217;\u0153il (\u201cenganyar l&#8217;ull\"), fa refer\u00e8ncia a elaboracions que imiten l&#8217;aparen\u00e7a d&#8217;un ingredient o plat, per\u00f2 que amaguen al seu interior una preparaci\u00f3 completament diferent. M\u00e9s que una recepta, \u00e9s un joc sensorial que busca despertar la curiositat i l&#8217;emoci\u00f3 del comensal.  <\/p>\n\n<p>En aquesta ocasi\u00f3, el xef Javier S\u00e1nchez ens presenta la seva proposta: <strong>Trampantojo de tom\u00e0quet<\/strong>, una creaci\u00f3 que combina t\u00e8cnica, est\u00e8tica i sabor en equilibri perfecte. El nucli \u00e9s un delicat <strong><em>semifred de burrata,<\/em><\/strong> que aporta cremositat i frescor, embolicat en un sorprenent <strong><em>glasejat de tom\u00e0quet<\/em><\/strong> elaborat amb <a href=\"https:\/\/www.sosa.cat\/ca\/producte\/proglacage\/\" target=\"_blank\" rel=\"noreferrer noopener\">Progla\u00e7ace,<\/a> la nostra \u00faltima innovaci\u00f3 per a glasejats 100 % vegetals. Aquest producte elimina la necessitat d&#8217;utilitzar gelatina animal o pectines, aconseguint un acabat brillant, estable i amb un sabor pur a fruita.  <\/p>\n\n<p>La recepta es completa amb un <strong><em>crumble de festuc i alf\u00e0brega,<\/em><\/strong> que aporta textura cruixent i notes arom\u00e0tiques que realcen el conjunt.
