Aquesta \u00e9s la tercera creaci\u00f3 d&#8217;una s\u00e8rie de sis que desenvolupem en col\u00b7laboraci\u00f3 al llarg de l&#8217;any, pensades especialment per al canal HORECA i els professionals de la restauraci\u00f3. <\/p>\n\n<p class=\"wp-block-paragraph\">En aquesta proposta, l&#8217;est\u00e8tica i la precisi\u00f3 t\u00e8cnica s&#8217;uneixen gr\u00e0cies a l&#8217;\u00fas de la t\u00e8cnica del mosaic. Aquest m\u00e8tode consisteix en <strong><em>disposar ordenadament petits elements s\u00f2lids<\/em><\/strong> (com vegetals, carns o fruites) per formar una estructura visualment harm\u00f2nica, gaireb\u00e9 pict\u00f2rica. \u00c9s una t\u00e8cnica que exigeix precisi\u00f3 en el tall, equilibri crom\u00e0tic i un profund coneixement dels ingredients, tant en sabor com en textura.  <\/p>\n\n<h2 class=\"wp-block-heading\">Aglutina en fred<\/h2>\n\n<p class=\"wp-block-paragraph\">Per aconseguir una estructura s\u00f2lida, sense renunciar a la frescor i definici\u00f3 dels ingredients, hem utilitzat <strong><a href=\"https:\/\/www.sosa.cat\/ca\/producte\/gelbinder\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gelbinder,<\/a><\/strong> un texturitzant que actua com a aglutinant en fred.
