Quin paper juguen el gust i l&#8217;olfacte en aquesta dansa gastron\u00f2mica? <\/em> Deixa&#8217;ns portar-te de la m\u00e0 cap al cor d&#8217;aquesta experi\u00e8ncia sensorial.<\/p>\n\n<h2 class=\"wp-block-heading\">Fisiologia del gust<\/h2>\n\n<p>L&#8217;experi\u00e8ncia del plaer sensorial es desplega a trav\u00e9s <strong>del sabor, el gust, el tacte i l&#8217;olfacte,<\/strong> fusionant la nostra percepci\u00f3 amb l&#8217;ess\u00e8ncia mateixa dels sentits. Mentre que <mark style=\"background-color:rgba(0, 0, 0, 0);color:#00cfab\" class=\"has-inline-color\"><strong>el tacte<\/strong><\/mark> ens connecta amb la textura i la temperatura dels objectes f\u00edsics, el gust i l&#8217;olfacte ens submergeixen en un m\u00f3n qu\u00edmic, on les nostres papil\u00b7les gustatives i receptors olfactius detecten les mol\u00e8cules que ens envolten. \u00c9s a trav\u00e9s d&#8217;aquests sentits que realment assaborim el m\u00f3n que ens envolta, fusionant el tangible amb l&#8217;intangible en una experi\u00e8ncia sensorial \u00fanica.  <\/p>\n\n<p>En el paisatge de <strong>la llengua, el paladar i la faringe<\/strong>, s&#8217;alberguen els nostres receptors gustatius, petits guardians que ens guien a trav\u00e9s d&#8217;un univers de sabors. En total, tenim uns deu mil receptors que s&#8217;allotgen en les anomenades <strong>papil\u00b7les gustatives,<\/strong> tot i que hi ha persones que tenen un nombre m\u00e9s gran (fins a 30000), i en aix\u00f2 radica la seva capacitat per apreciar millor els sabors.  <\/p>\n\n<p>Les c\u00e8l\u00b7lules receptores estan connectades a fibres nervioses, de manera que els impulsos generats arriben al cervell a trav\u00e9s d&#8217;un dels quatre nervis cranials i all\u00e0 les senyals es converteixen en el que anomenem <strong><mark style=\"background-color:rgba(0, 0, 0, 0);color:#00cfab\" class=\"has-inline-color\">sabor.<\/mark><\/strong><\/p>\n\n<p>El nombre de receptors disminueix amb l&#8217;edat, de manera que un jove pot apreciar la dol\u00e7or d&#8217;una soluci\u00f3 d&#8217;aigua que contingui 1 gram de sucre per litre, mentre que als 70 anys es poden necessitar deu vegades m\u00e9s per apreciar-ho.<\/p>\n\n<p>Podr\u00edem afirmar que el sentit del <strong><mark style=\"background-color:rgba(0, 0, 0, 0);color:#00cfab\" class=\"has-inline-color\">gust<\/mark><\/strong> est\u00e0 intr\u00ednsecament lligat a les sensacions fonamentals del sabor: <em><strong>dol\u00e7, salat, \u00e0cid i amarg.<\/strong><\/em> Aquestes percepcions es distribueixen de manera heterog\u00e8nia en la llengua, amb el dol\u00e7 predominant a la punta, l&#8217;amarg a la part posterior, i tant el salat com l&#8217;\u00e0cid als laterals. A m\u00e9s, no podem passar per alt l&#8217;umami, una sensaci\u00f3 gustativa associada a les prote\u00efnes, que no es percep com un sabor independent, sin\u00f3 que real\u00e7a i potencia les altres notes.
