Aix\u00f2 ha suposat un gran repte si ens referim a la pastisseria. Per qu\u00e8? Perqu\u00e8 en les receptes dolces hi ha components que s\u00f3n d&#8217;origen animal i que compleixen funcions t\u00e8cniques rellevants.   <\/p>\n\n<p>Per aquest motiu, \u00e9s important tenir els coneixements necessaris per saber com es poden substituir aquests productes. La ra\u00f3 \u00e9s que considerem fonamental <strong><mark style=\"background-color:rgba(0, 0, 0, 0);color:#00cfab\" class=\"has-inline-color\">no renunciar ni a les textures ni als sabors. <\/mark><\/strong>D&#8217;aquesta manera, seguirem creant tots els tipus de pastisseria que la gent desitgi consumir, encara que portin altres ingredients. <\/p>\n\n<p>En aquesta oportunitat parlarem sobre <strong>els lactis<\/strong> i la seva substituci\u00f3. Els lactis en receptes de pastisseria aporten cremositat, textura i sabor. La temperatura de la mezcla de aceites debe ser de 18\/20 \u00b0C.<\/li>\n                                      <li>A\u00f1adir los aceites poco a poco en la primera preparaci\u00f3n y emulsionar con batidor el\u00e9ctrico.<\/li>\n                                      <li>Si se corta la emulsi\u00f3n, significa que ha subido demasiado la temperatura de la mezcla. En este caso, enfriar hasta que empiece a cristalizar y volver a emulsionar.<\/li>\n                                      <li>El resultado final debe de ser como una mayonesa densa.
